Marrons Glaces (candied chestnuts) are a traditional holiday and winter delicacy.
Marrons, or chestnuts, are peeled and boiled in water until tender. The water is then drained and the chestnuts (or "castagne" in Italian) are candied by a slow process of immersion in hot vanilla flavored sugar-syrup. When candied to the core, the marrons are then glazed with the same sugar-syrup and hand-wrapped in gold foil for freshness.
Marrons Glaces make an elegant statement when served with fruit or as an addition to a holiday sweet table. Glazed Chestnuts by Corsiglia also make a wonderful gift.
