Off-white in color, as opposed to the yellow of the cow's milk variety, Cypress Grove Goat Milk Cheddar is not overly "goaty," although the chevre is discernable. Excellent twist on cheddar December 3, 2008
This has all the creamy richness of goat milk, while the chevre is, at the same time, not overpowering. Because of its goat milk background, this cheese doesn't taste as sharp as a similarly sharp cow's milk. But, it is sharp, not just medium sharp, and does indeed go well with a Granny Smith apple just as in the picture.
